Eagle Eye Rolls Out AI-Powered Potato Sorting Systems

Most people don’t think of innovation when they think of a potato facility. But at Eagle Eye Produce, we’re working to change that. Our Idaho Falls warehouse has recently gone through major upgrades designed to help us pack faster, reduce waste, and deliver more consistent quality.

In this video, General Manager Jonathan Rivera walks through some of the new tech that’s now live at our facility.

Rethinking What a Potato Facility Can Be

Traditionally, potato packing has relied heavily on manual labor and conventional machinery. But with better tools and smarter systems now available, we’ve been investing in tech that helps us work more efficiently and keep quality high.

Upgrades to Our Russet Line

Here’s what’s new:

  • AI-powered graders use cameras and sensors to analyze each potato in real time
  • Theses systems have been trained to recognize a wide range of defects, including shape, color, and surface damage
  • The AI-powered system improves over time by learning from new examples and feedback
  • Robotic sorters that can make 100 picks per minute
  • No equipment on the line is older than 2016

Rebuilding the Yellow Potato Line

We have also rebuilt the yellow potato line from the ground up:

  • Replacing a mechanical sorter with an AI-powered optical sorter
  • The new sorter takes 7–9 photos of every potato
  • This improves sizing, consistency, and overall control
  • We’ve increased capacity to up to 40 tons per hour

Why It Matters

These changes help us:

  • Catch more issues automatically
  • Reduce the need for manual inspection
  • Move product faster with fewer errors
  • Deliver a more consistent pack to our customers

We’re investing in tools that adapt and improve over time. It’s not just a one-time upgrade—it’s a smarter long-term approach to packing.

More to Come

This is just the start. Our team in Idaho Falls is proud of what we’ve built, and we’re committed to staying ahead as technology evolves.
